A local craft, built to last.

Two chefs, one recipe

Originally from the Vaud Riviera and the Lausanne region, we both trained as chefs before continuing on toward the Swiss federal diploma (Brevet fédéral) in professional cooking. We met in a kitchen, and over the years we perfected our Malakoff recipe until it became a real signature dish at the establishments where we worked.

Today, we decided to go further and put our craft to work by creating KOFF. With the drive to start a business in our own region, to work alongside the restaurateurs around us, and above all to share a product close to our hearts, we chose to bring our recipe and our know-how to restaurant professionals.

Created by chefs, for chefs.

Because it's, above all, a product we deeply love: a product from our childhood, a product of the local terroir, Gruyère AOP. We've been making our malakoffs for many years and we know our product inside out. And every time someone tastes it, the reaction is the same: exceptional. So we asked ourselves: why not put this craft to work for restaurateurs, and for anyone else who wants it?

KOFF, the company, was founded in 2026 in the canton of Vaud, but our Malakoff recipe has been with us for much longer than that.
